Mint Chocolate Chip Cookies


Yes, they're green cookies!!!!  But, I promise that they're supposed to be green and they are mighty delicious for all you mint chocolate lovers out there.  They remind me of an Andes mint but in cookie form.  These cookies are great to take into the office, church, or school this week in honor of St. Patty's Day!  The original recipe is from Betty Crocker. (makes approx. 3 dozen cookies)

Ingredients:
1 pouch of Betty Crocker Sugar Cookie Mix
1 egg
1/2 cup butter, softened
1/4 tsp peppermint extract
6-8 drops of green food coloring (I used 6 drops)
1 cup creme de menthe baking chips
1 cup semi-sweet chocolate chips or chunks
(I found a bag of Nestle mint chips and semi-sweet chips combined...a seasonal buy for the holiday I'm guessing...)

Directions:
1. Preheat oven to 350 degrees F. Following instructions on pouch of sugar cookie mix - combine cookie mix, egg, and butter in a large bowl.  Stir until well mixed.  (Get ready for your arm workout on this one...)

2. Add food coloring and stir well until you're satisfied with your green shade.  Remember that the green color of the cookies does appear to darken slightly in the oven because of the browning of the cookies.

3. Fold in the mint chips and semi-sweet chocolate chips - stir until your arm about falls off.  Using small spoon or cookie scoop, drop dough two inches apart on ungreased cookie sheet.

4. Bake approximately 13-15 minutes, or until ever so slightly brown and cooked through.  Remove from cookie sheet and place on wire rack for cooling.  Best served warm with some cold milk!  Store tightly covered at room temp.

Now if you're really feeling crazy, you can even add some green food coloring to your milk - a fun option with kids of all ages!  Enjoy and let me now what you think of 'em... -Kristen
