Gulliver's Corn

I'm sure you've all been recipe planning in preparation for Thanksgiving dinner.  Can you believe that it's only a week and a half away?!?  Our family is funny when it comes to Thanksgiving dinner, because we always look forward to the side dishes.  We could care less about the turkey - some years we skip it all together and go for chicken breasts with cranberry orange glaze or Cornish game hens instead.

I wanted to share this Gulliver's Corn recipe with you because it's one of our family's favorite side dishes for Thanksgiving each year.  My mom always makes it for the holidays and now our little family makes it for our special occasion meals as well.  It's guaranteed to be a crowd-pleaser!  Make sure to have some recipe cards for guests to copy it down, because I promise you that they will ask for the recipe.

Ingredients:
2 (20 oz) packages frozen yellow corn
1/2 pint whipping cream
1/2 pint milk, preferably whole milk
1 tsp salt
6 tsp sugar
pinch of white/cayenne pepper (black pepper also works)
2 Tbsp melted butter
2 Tbsp flour
1/2 cup grated Parmesan cheese
fresh chives for garnish (optional)

Directions:
1. Combine corn, whipping cream, milk, salt, sugar, and pepper in a pot.  Cover and bring to a boil, then lower heat and simmer for 5 minutes.
2. Blend melted butter and flour in a small bowl.  Add to corn mixture.  Stir well then remove from heat.
3. Pour into oven safe dish and top with Parmesan cheese.  Place dish under broiler in oven until evenly browned.
4. If desired, garnish with fresh chives.  Serve warm with lots of other delicious food!
