Maple Glazed Chicken
This was a super yummy chicken recipe that my husband found on allrecipes.com. It was very quick and did not require many ingredients, which is always a good thing for us!
Ingredients:
1 lb fresh (not frozen) chicken tenders
2 tsp steak seasoning (we used Montreal Steak flavored Grillmates)
2 Tbsp olive oil
1/2 cup maple syrup
Directions:
Rinse chicken tenders, then liberally dust with steak seasoning. Heat olive oil in skillet. Once hot, add chicken to skillet and cook thoroughly - approximately 4-5 minutes on each side. When the chicken is done, remove from skillet and set aside on a platter. For the maple glaze, pour maple syrup into the same skillet and stir so all the remaining spices and brown flavor bits combine with the syrup. Bring sauce to a boil and simmer for 2 minutes. Then pour the sauce over the chicken tenders and serve.
The original recipe says to serve on top of mashed sweet potatoes and sprinkle green onions - or grilled onions (see picture above) - on top. We just had red potatoes so we roasted those in the oven with some Lipton onion soup seasoning and served them as a side dish. You can't go wrong with this one - it was mighty delicious! -Kristen
